@kalejunkie NEW! Ginger-Turmeric & Lemon Chicken Soup 🍋 This is one of those recipes that feels like you’re taking care of yourself from the inside out. It’s cozy, packed with protein and vitamin C, and made with ingredients that support your body’s natural collagen production. And while it simmers, I’m taking care of my skin from the outside too. I’ve noticed more skin laxity from aging and hormonal changes, so I’ve been using @Murad Skincare Retinal Resculpt Body Treatment consistently and I am truly obsessed. My skin looks visibly firmer, tighter and smoother, and it’s become such an easy part of my routine—it’s luxurious too! Remember, skin health isn’t just about the products you use or the food you eat. It’s always a combination of both 😉. #muradpartner And PLEASE make this soup because it is so good👇 Makes 6 to 8 servings 2 tablespoons olive oil 1 yellow onion, diced 3 garlic cloves, minced 2 tablespoons fresh ginger, grated 2 teaspoons ground turmeric 3 carrots, sliced 3 celery stalks, sliced 6 cups chicken bone broth (or chicken broth) 1.5 pounds boneless, skinless chicken thighs 1 teaspoon kosher salt 1 teaspoon ground black pepper 1 cup dry small pasta of choice (pastina, orzo, etc) 3 cups fresh baby spinach 2 lemons, juiced 1/4 cup parsley, chopped Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 4 minutes. Add the garlic and ginger, and cook 1 minute until fragrant, then stir in the turmeric. Add in the carrots, celery, and bone broth. Then add the chicken, salt, and pepper. Bring to a boil. Once boiling, reduce heat to low, cover, and simmer until the chicken is cooked through, about 25 minutes. Remove the cover and using two forks, shred the chicken. Set aside. Last, cook the pasta: Add the dry pasta directly to the simmering broth. Cook until tender, about 8-10 minutes. Stir the shredded chicken back into the pot. Add the baby spinach and stir until just wilted. Remove from heat and stir in the lemon juice. To serve, ladle into bowls. Top with fresh parsley and a drizzle of olive oil.
