Cottage Cheese Pancakes
Makes 6-8 small pancakes

1/2 cup cottage cheese
1/2 cup oats (I use NOW organic rolled oats)
2 eggs
1 tsp vanilla extract or paste
Pinch of salt

Blend everything up until smooth. Heat skillet over medium heat. Using about 2 Tbsp of batter per pancake, cook each pancake for 2-3 minutes before flipping and cooking for another minute. Serve warm!
