🍷 Soup season has arrived, and there’s nothing cozier than sharing a warm, homemade dinner with friends. 

This roasted tomato soup is one of my favorites to make when I’m hosting, because it’s simple, comforting, and always a pleaser.

Here’s what you need to try this at home:

🍅 Ingredients

8–10 Roma tomatoes
1 red onion
2 celery stalks
2 carrots
1 red bell pepper
1 whole garlic bulb
1 tbsp Italian seasoning
1 tsp red pepper flakes
1 tbsp olive oil
4 cups chicken broth
½ cup heavy cream
Salt, to taste

Toppings
White cheddar cheese
Crispy bacon
Fried sage
Toasted croutons
Heavy cream, for drizzling

🍂 Instructions

Preheat the oven to 425°F.
Roughly chop the tomatoes, onion, celery, carrots, and red bell pepper. Add everything to a baking dish along with the whole garlic bulb. Drizzle with olive oil and season with Italian seasoning, red pepper flakes, and salt.
Roast for about 30 minutes, or until the vegetables are tender and beginning to brown.
Transfer the roasted vegetables to a Dutch oven. Squeeze the roasted garlic cloves from their skins and add them to the pot.
Add the chicken broth and heavy cream. Blend until smooth using an immersion blender. You can also carefully blend the soup in batches using a countertop blender.
Let the soup simmer over low to medium-low heat until warmed through and slightly thickened. Taste and adjust the salt as needed.
Serve with a drizzle of heavy cream and top with white cheddar, crispy bacon, fried sage, and toasted croutons.
