🏆 SISI Bagels is a Madrid-born, New York-style bagel brand founded by Victoria Todorov and Cristian Thomas in October 2024. Every SISI bagel is hand-rolled and baked fresh daily using our own dough and recipes. Our goal is to bring the energy, generosity and creativity of New York bagel culture to Madrid, while developing bold sandwiches, seasonal specials and collaborations with our own European identity. In 2025, SISI was awarded third place in the Best International Bagel category at the New York BagelFest, an incredible milestone for a brand that had been open for just over a year.  Since then, SISI has continued to grow through new locations, international collaborations and media coverage. In June 2026, the brand organized a special Paris pop-up with Petrossian, bringing its bagels to a new audience and marking another important step in SISI’s international development.
