If you’ve seen how much meat we cook for our house full of athletes, telling you that THIS tofu dish is one of ALL our kids’ favorite meals OF-ALL-TIME speaks volumes about how phenomenal it is.

This Black Pepper Tofu recipe comes from one of MY all-time favorite chefs, @ottolenghi , from his cookbook PLENTY, my favorite cookbook of his. Crispy tofu tossed with buttery shallots and a bold black pepper sauce—and yes, we doubled it for the video.

We also made my friend Monica’s sticky sweet garlic noodles. Until recently, I thought they were just a brilliant concoction she’d thrown together. Then garlic noodles started popping up all over my FYP, and I thought, “Monica, I think the jig is up!” 😂

BLACK PEPPER TOFU

• 2 lb firm tofu, cut into 1-inch cubes
• Vegetable oil, for frying
• Cornstarch, for coating
• 11 tbsp butter (or plant-based butter to make it vegan)
• 12oz shallots, thinly sliced
• 4 mild red chilies, thinly sliced (optional)
• 12 garlic cloves, crushed
• 3 tbsp chopped fresh ginger
• 3 tbsp sweet soy sauce (kecap manis; Asian grocery stores or online)
• 3 tbsp light soy sauce
• 1 tbsp + 1 tsp dark soy sauce
• 2 tbspn superfine sugar
• 5 tbsp coarsely crushed black peppercorns (we use half of this; add to taste!)
• 16 thin scallions, cut into 1¼-inch pieces

1. Coat tofu in cornstarch; shake off excess. Heat ¼ inch of oil in a large pan. Fry, turning until golden. Drain on paper towels.
2. Discard oil. Melt butter. Add shallots, garlic and ginger. Cook over medium-low heat about 15 minutes, stirring, until soft.
3. Stir in soy sauces, sugar and pepper to taste. Toss in tofu for 1 minute to warm through. Stir in scallions.

MONICA’S STICKY SWEET GARLIC NOODLES

• 1 lb pasta
• 4 tbsp butter
• 5–7 garlic cloves, minced
• 2–4 tbsp brown sugar
• ¼ cup soy sauce
• 2 tbsp each fish sauce, oyster sauce and sesame oil
• White / black pepper, to taste
• 1 cup grated Parmesan
• sliced green onions
Melt butter over medium heat. Sauté garlic to lightly golden Add sugar, soy sauce, fish sauce, oyster sauce, sesame oil, peppers. Simmer gently until sugar dissolves. Toss sauce, parm and scallions #stirfry #vegetarian #tofu #mealprep @lodgecastiron @surlatable
