Pork Belly Bites

1.5 lbs pork belly, cut in cubes
3 cloves garlic, thinly sliced
1 cup spring onions, chopped
2 cups water
1/2 pork bouillon cube (I used @cookwithknorr )
1/3 cup soy sauce
3 pieces Star Anise
1 Tbsp dark soy sauce (optional)
1 tsp chili flakes (optional)
1/4 cup rice vinegar
1/2 cup honey
2 Tbsp ginger puree

1. Heat a large oven-safe skillet or Dutch oven over medium heat. Season the pork belly with kosher salt, then sear on all sides until deeply golden brown.
2. Carefully drain the excess oil from the pan.
3. Add the water, bouillon cube, soy sauce, rice vinegar, star anise, ginger, garlic, chili flakes, spring onions, and honey. Stir to combine and bring the liquid to a boil.
4. Transfer the pan to a preheated 350°F oven and braise uncovered for 45 minutes to 1 hour, or until the pork belly is fork-tender.
5. Remove the pork belly from the pan and set aside. Simmer the sauce over medium-high heat until reduced, thick, and glossy.
6. Return the pork belly to the pan and gently toss in the sauce over low heat for about 1 minute, making sure every piece is coated.
7. Serve hot over steamed white rice and spoon the extra sticky sauce over the top.
