The only cobbler recipe you need this fall

HOT HONEY APPLE COBBLER 🍎🍯🍏 

Ingredients:

Apple Filling

- 8 medium apples, peeled and sliced
- 150 g salted butter
- ½ cup brown sugar
- ¼ cup Mike’s Hot Honey
- 2 tsp cinnamon
- ¼ tsp nutmeg
- ¼ tsp cardamom, optional
- 1 tbsp lemon juice
- 1 tsp vanilla
- Pinch of salt

Biscuit Topping

- 2 cups all-purpose flour
- ½ cup sugar
- 2 tsp baking powder
- ½ tsp salt
- 85 g cold butter, cubed
- ⅔ cup buttermilk
- 1 tsp vanilla

For the Top

- 1 tsp melted butter
- 1 tsp sugar
- Mike’s Hot Honey, for drizzling

Instructions:

1. Melt the 150 g butter in a large pan over medium heat, stirring continuously until it foams, turns golden brown, and smells nutty. Remove from the heat and let it cool slightly until warm.
2. Add the brown sugar, Mike’s Hot Honey, cinnamon, nutmeg, cardamom, lemon juice, vanilla, and salt. Stir until combined.
3. Add the apples and cook over medium heat for 8–10 minutes, stirring occasionally, until slightly softened and coated in a glossy sauce.
4. Transfer the apple filling to a baking dish and spread evenly.
5. For the biscuit topping, mix the flour, sugar, baking powder, and salt.
6. Add the cold cubed butter and rub it into the dry ingredients with your fingertips until the mixture resembles coarse crumbs.
7. Add the buttermilk and vanilla and mix gently just until a soft, shaggy dough forms. Do not overmix.
8. Scoop the dough over the apple filling, leaving a little space between each scoop. Gently flatten and shape the tops into round biscuit shapes.
9. Mix 1 tsp melted butter with 1 tsp sugar and lightly brush or spoon it over the biscuit tops.
10. Bake at 375°F for 35–45 minutes, until the topping is golden and crisp on top, soft and tender inside, and the apple filling is bubbling around the edges.
11. If the top is still pale, broil for about 1 minute, watching it constantly, until golden brown. Keep a close eye on it so it doesn’t burn.
12. Let the cobbler rest for about 10 minutes, then finish with a drizzle of Mike’s Hot Honey before serving.
