@kalejunkie CRUNCHY DELICATA SQUASH RINGS W/CHIPOTLE LIME SAUCE! You’ve been warned you will eat the entire tray before it makes it to the table 😏 These are super crunchy on the outside, soft in the center, and truly the only way I want to eat squash this season. I seriously cannot with soggy squash 🤭. This recipe also happens to be gluten-free, but you can of course use regular flour and panko instead.

Makes 4 servings⁣
2 large delicata squash⁣
Olive oil for drizzling, salt & pepper⁣
3 eggs⁣ (my video only shows two bc it stopped recording 😒)
3/4 cup gluten-free flour of choice⁣
3/4 cup grated parmesan cheese⁣
1 cup gluten-free panko⁣
1/3 cup everything seasoning⁣
Avocados oil/olive oil spray⁣
⁣
Chipotle lime sauce⁣
1 cup fat free greek yogurt ⁣
1 lime, juiced⁣
1 tsp chipotle powder⁣
1 tsp dried cilantro (optional)⁣
1 tsp garlic powder⁣
1 tsp kosher salt⁣
1/2 tsp ground black pepper⁣
⁣
Preheat oven to 400F. Cut squash into 1/2” rings and remove the seeds with a spoon/small cookie cutter. Place them in a single layer on a large baking sheet. Toss very lightly with olive oil, salt and pepper. Bake for 20 minutes. While that’s happening, prepare the dredging station. In one bowl, whisk the eggs well. In another, add the flour. And in another bowl, mix together the panko, parmesan, and everything seasoning. When the squash come out of the oven, dip each one in flour (shaking off any excess), then the egg, then the panko-parmesan mixture. Return each one to the tray. Lightly spray the tops with olive oil/avocado oil spray. Bake for 15 minutes more, flipping at the halfway point. To make the sauce, add the yogurt, lime juice and seasonings to a small bowl. Whisk until smooth and taste and adjust as needed. Dip squash into the sauce and enjoy! #delicatasquash #fallrecipes⁣
