Ingredients

Graham cracker crust
- 100 g graham crackers
- 25 g granulated sugar
- 45 g unsalted butter, melted
- Pinch kosher salt

Cheesecake filling

- 680 g / 24 oz full-fat Philadelphia cream cheese — 3 standard blocks, room temperature
- 150 g granulated sugar
- 90 g full-fat sour cream, room temperature
- 2 large eggs, room temperature
- 1 large egg yolk, room temperature
- 10 g cornstarch
- 1 tsp vanilla extract
- 1 tsp finely grated lemon zest
- 1 tsp fresh lemon juice
- ⅛ tsp kosher salt
