CHICKEN MEATBALLS:
1 pound (450 grams) ground chicken
1/2 cup (100 grams) whole-milk ricotta cheese
3 tablespoons (50 grams) fat-free cottage cheese
1 large egg
1/4 cup (20 grams) finely grated Parmesan cheese
1/2 cup (50 grams) breadcrumbs
2 garlic cloves, finely grated
1 teaspoon chicken seasoning
1 teaspoon Italian seasoning
1 teaspoon dried oregano
Pinch of red pepper flakes
2 tablespoons finely chopped fresh parsley
2 tablespoons finely chopped fresh basil
Kosher salt, to taste
Freshly ground black pepper, to taste
1 tablespoon extra-virgin olive oil, plus more for greasing or spraying

TOMATO SAUCE:
Nonstick cooking spray or olive oil, for the skillet
1/2 medium yellow onion, finely diced
1 garlic clove, finely chopped
1 tablespoon tomato paste
1/2 teaspoon dried oregano
1 (14-ounce or 400-gram) can chopped tomatoes
1/2 cup chicken stock or bone broth
Kosher salt, to taste
Freshly ground black pepper, to taste
Small handful fresh basil leaves, torn

FOR SERVING:
