If you grew up eating eggs in a basket or toad in a hole, try this fall variation: Squash Egg in a Hole by lmsthompson 🍳

INGREDIENTS:
Olive oil
Kosher salt, to taste
Black pepper, to taste
2 medium or large eggs
Chili powder or paprika, to taste
1/2 cup shredded cheese
1 slice sourdough bread, cut lengthwise into quarters
Hot honey or hot sauce
1 honey nut squash

RECIPE:
1. Preheat oven or toaster oven to 400ºF. Line a small baking sheet with parchment paper.
2. Halve the squash lengthwise, then scoop out the seeds. Drizzle with a little olive oil and season with salt and pepper and arrange cut side-down on the prepared baking sheet. Roast until tender, about 15 minutes.
3. Flip the squash over, then crack one egg into wells of each piece. Season the eggs with a little extra salt, pepper, and chili powder or paprika. Top each half with cheese. Add the sliced bread to the pan, then return to the oven and broil until the egg whites are set, and the cheese is melted and bubbly, about 5-8 minutes (the bread may be done sooner).
4. Drizzle the cheesy roasted squash with hot honey or hot sauce and enjoy.
