I made it twice already, and my family is begging for round three! 😂 This Pumpkin Banana Cobbler is buttery, warmly spiced, tender in the center, crisp around the edges, and topped with glossy bananas. Add a scoop of vanilla ice cream while it’s warm, let it melt into every gooey nook, and prepare to fall in love.

Pumpkin Banana Cobbler

Prep time: 10 minutes
Cook time: 35–45 minutes
Servings: 6–8
Skillet: 10-inch oven-safe skillet

Ingredients

* 1 stick butter (½ cup)
* 1 cup self-rising flour
* ¾ cup granulated sugar, plus 2 tablespoons for sprinkling
* 1 cup milk
* ¼ cup pumpkin purée
* 1 teaspoon ground cinnamon, plus ¼ teaspoon for sprinkling
* Pinch of salt
* 2 bananas, peeled and halved lengthwise

Instructions

1. Preheat the oven to 375°F. Place the butter in the skillet and put it in the oven until melted. Carefully remove.
2. In one bowl, whisk together the flour, ¾ cup sugar, 1 teaspoon cinnamon, and salt. Add the milk and pumpkin purée and whisk gently just until combined.
3. Pour the batter over the melted butter. Do not stir.
4. Arrange the banana halves on top, cut sides facing up.
5. Sprinkle the remaining 2 tablespoons sugar and ¼ teaspoon cinnamon evenly over the top.
6. Bake for 35–45 minutes, checking at 35 minutes, until golden and the center is set. A toothpick inserted into the batter away from the bananas should come out with moist crumbs rather than wet batter.
7. Let rest for 15–20 minutes before serving. Serve warm with vanilla ice cream, if desired.
