Hot Honey Cheesy Dinner Rolls 🧀🥐🔥

Recipe for a 9×9-inch pan 👇

Ingredients:

Tangzhong:

- ¼ cup bread flour (30 g)
- ¼ cup milk (60 g)
- ¼ cup water (60 g)

Dough:

- 3 cups + 2 tbsp bread flour (375 g)
- ⅔ cup lukewarm milk (155 g)
- 1 large egg (50 g)
- 3 tbsp + 2 tsp sugar (45 g)
- 2¼ tsp instant yeast (7 g)
- ¼ cup softened unsalted butter (55 g)
- 1¼ tsp fine salt (7 g)

Filling:

- 6 oz whole-milk, low-moisture mozzarella

Egg wash:

- 1 egg beaten with 1 tbsp milk

Hot Honey Garlic Butter:

- ¼ cup melted butter
- 3 garlic cloves, minced
- 3 tbsp Mike’s Hot Honey Original
- 1 tbsp chopped parsley

—

Instructions:

1. Cook tangzhong ingredients over medium-low heat, stirring until thick. Cool to room temperature.
2. Mix tangzhong with all dough ingredients except butter. Knead in a stand mixer on speed 2, gradually adding butter, until smooth and elastic, about 10–15 minutes.
3. Cover and rise in a warm spot until doubled. If cold, place the covered bowl in a switched-off oven beside a mug of hot water; refresh the water as it cools.
4. Once doubled, divide dough into 100 g portions, fill with mozzarella and seal. Arrange seam-side down in a greased, parchment-lined pan. Cover and rise for about 1 hour, or until doubled and puffy.
5. Brush with egg wash. Bake in a preheated oven at 350°F for 28–33 minutes, or until golden brown.
6. Mix melted butter, garlic, Mike’s Hot Honey and parsley. Brush over warm rolls.
