Day 2 of Dinner, For Real 👩🏻‍🍳

This sweet and salty roasted carrot salad is my newest side dish obsession! The carrots are tender and sweet, but it’s the combination of crunchy pumpkin seeds, briny green olives, and nutty Parmesan that takes it over the top.

I added some roasted golden beets (my husband loves them!), but it’s fantastic with just the carrots.
