Turkey Orzo Soup but make it cozy, lemony, and actually flavorful 🍋🍲 This is my go-to when I want something comforting, nourishing, and perfect for meal prep. Roasting the turkey first gives the broth insane depth and the orzo makes this a filling meal. Save this for the next lazy Sunday when you want to try a more in depth recipe! This whole process took about 4 hours from start to finish. Using Caraway Home pot as always 🤍 Ingredients Bone-in turkey breast (about 6–7 lbs, mine was 6.8lbs) Olive oil 2tbsp butter Salt, pepper, onion powder, paprika 1 large white onion, chopped 3–4 large carrots, chopped 3–4 celery stalks, chopped 1-2 tablespoons minced garlic 2 cartons turkey or chicken broth (64 oz total) 2 rosemary sprigs 1 cup orzo Fresh parsley, chopped 1 lemon Instruction: Preheat oven to 400°F. Pat turkey dry and season generously with salt, pepper, onion powder, and paprika. Roast breast-side up for about 1 hour 20 minutes until cooked through. While your turkey is roasting, in a large pot, heat olive oil and a butter. Add onion, carrots, and celery with a pinch of salt and pepper. Sauté 10–12 minutes until soft and fragrant. Add garlic and rosemary and cook 30 seconds. Pour in broth and bring to a gentle simmer. Let simmer while turkey finishes cooking. Once turkey is done, take all the pan juices and add them to the broth. Then tent your turkey and allow it to rest for 15 minutes. Optional but extra yummy: After the turkey is done resting, remove all meat from the breast bone. Add the bone to the pot of broth and bring pot to a simmer for 20-30 minutes. Add all of the turkey meat to the pot and simmer 10 minutes. In a separate pot, cook orzo according to packaging. Once cooked, stir in cooked orzo. Cooking the orzo in a separate pot will keep the soup brothy!!! Finish with lots of fresh lemon juice, chopped parsley, salt and black pepper to taste. Cozy, comforting, lemony, and perfect for leftovers all week 🤍🍋 #turkeysoup #turkeylemonorzosoup #soup #lemonorzosoup
