Sun-dried Tomato Orzo using the @Tramontina USA 4 Qt. Enameled Cast Iron Braiser. This piece of cookware is my favorite for one pot meals (and it’s currently on sale for their Anniversary Sale!). It is versatile in it’s ability to used from stovetop to oven. Perfect for any meal at any time of year. Recipe 2 Cups Orzo 1 Lb Mild or Hot Italian Sausage 1 Pint Cherry Tomatoes Halved (~1 1/2 Cups) 4 Garlic Cloves Minced 1 Yellow Onion Diced 1/4 Cup Chopped Sun-dried Tomatoes (5-6 Chef Cut Pieces) 2 Cups Baby Spinach (~5 oz.) 2 Basil Sprigs 3-4 Basil Leaves Thinly Sliced 1 Tsp Italian Seasoning 1/4 Tsp Red Pepper Flakes 3 Tbsp Double Concentrated Tomato Paste(~2 oz./Half of a tube) 2/3 Cup Dry White Wine (I used Chardonnay) 3 Cups Chicken Broth 1/3 Cup Heavy Cream 1/4 Cup Freshly Grated Parmesan Cheese Salt and Pepper Olive Oil Using the 4 Qt. Enameled Cast Iron Braiser on medium heat add olive oil. Brown the sausage, stirring occasionally making sure sausage is broken up into bite size pieces. Cook for 4-5 Minutes. Add onions. Stir. Season with Salt and Pepper. Once onions begin to look translucent drop the heat to medium low add in garlic. Season with Italian seasoning and red pepper flakes. Cook for 2-3 Minutes. Add Tomato Paste, stir and cook for 2 minutes until the bright red paste turns a rust color. Add in Sun-dried Tomatoes. Stir. Add in dry orzo. Toast the orzo for 2-3 minutes. Stirring occasionally. The edges of the orzo should be slightly translucent. Deglaze the pan with dry white wine. Once almost all of the wine is absorbed add in chicken broth. Bring the broth up to a simmer. Add in basil sprigs. Allow the leaves to wilt. Stir making sure to scrape up any orzo that could be sticking to the bottom of the pan. Add a pinch of salt. Stir. Cover with the lid. Allow to simmer for 10-12 Minutes. Uncover and stir. Remove the basil sprigs. Add 1/3 Cup Heavy cream, stir. Add in cherry tomatoes stir and allow the tomatoes to soften (2-3 minutes). Add 1/4 Cup of freshly grated parmesan cheese (If it begins to thicken up too much you can always add a little more chicken broth). Add in spinach. I keep the lid partially covered for 2 minutes to help the spinach wilt quicker. Once spinach is wilted and orzo is tender turn off the heat and finish with fresh basil and a drizzle of olive oil. Serve and Enjoy! #tramontina #tramontinausa #anniversarysale #sundriedtomatoorzo #orzorecipe #onepanmeal #30minutemeal
