Creamy Cheddar Gnocchi using @trulygrassfed unsalted butter and sharp cheddar cheese. This decadent dish is perfect for a date night dinner in. Truly Grass Fed products are from cows that are raised outdoors on pasture for their entire lives and
certified Animal Welfare Approved by A Greener World. Choosing good practice and environmentally friendly ingredients are important to me when shopping for my groceries.

How I made it:
1 lb gnocchi
3 Tbsp Truly Grass Fed unsalted butter
3/4 Cup Freshly Grated Truly Grass Fed Sharp Cheddar Cheese
2/3 Cup Heavy Cream
1/4 Cup Freshly Grated Parmesan
4 Garlic cloves minced
2 Tbsp Chives
4 oz. Guanciale cubed
Pinch of Salt
Black Pepper
Pinch of Red Pepper Flakes

Bring a large stock pot of salted water to a boil.
In a skillet on medium heat add guanciale, render down the fat (5-7 minutes). Remove once crispy and set aside. On medium low heat to the same pan add 3 Tbsp Truly Grass Fed Unsalted Butter. Once melted add garlic, season with salt, pepper, and red pepper flakes. Cook until fragrant (2 minutes). Add heavy cream, stir. Simmer until thickened(3 minutes). Once heavy cream is thickened drop the heat to low and slowly add in Truly Grass Fed SharpCheddar Cheese. Add in Parmesan Cheese. Add cooked gnocchi, toss in the sauce. Finish with extra fresh cracked black pepper, chives and the crispy guanciale. Serve and enjoy!
