Christmas Day Brunch edition: Italian Style Shakshuka using @Tramontina USA PRO Fusion 12 in. Aluminum Nonstick Fry Pan. This pan has sleek appearance as well as functionality of non stick, perfect for any egg dish.  Ingredients  5 eggs  1 onion diced  1 bell pepper diced (I used a mix of green and red) 3 garlic cloves minced  1 Cup cherry tomatoes halved  28 oz. Whole peeled tomatoes  1/4 C mozzarella cheese  2 Tbsp freshly grated parmesan  1 parmesan rind (optional) 1 Tbsp Italian seasoning  1/2 tsp red pepper flakes  Salt and pepper to taste  Olive oil  Parsley for garnish  On medium heat using the Pro Fusion 12 inch aluminum nonstick fry pan add a small amount of olive oil. Once heated add onion and bell peppers. Season with Italian seasoning, red pepper flakes, salt and pepper. Cook for 4-5 minutes. Add garlic. Cook an additional 2 minutes until fragrant. Add in fresh cherry tomatoes. Cook for  2 minutes. Pour in whole peeled tomatoes and smash until a chunky sauce appears. Season sauce with salt and pepper. Add a parmesan rind and simmer for ten minutes. Taste. If it is too acidic, add a pinch of sugar. Remove parmesan rind. On medium low heat, make small holes in the sauce mixture and place eggs. Continue to simmer for 6-8 minutes until egg whites are no longer runny. If you want more of a poached style cover the pan for 3 minutes during the cooking process. Finish off with mozzarella, parmesan and parsley. Serve with crusty bread and enjoy.
