‘Nduja Arrabbiata 🍝

Ingredients

16 oz. Pasta (I used filei calabresi)
6 oz. ‘Nduja Spreadable salami
28 oz can whole peeled tomatoes
1/4 C of water in the 28oz can
1 C cherry tomatoes sliced
5 garlic cloves sliced
3 baby onions or 1 regular onion finely chopped
1 tsp red pepper flakes
Salt and pepper
Basil for garnish
2-3 Tbsp Olive oil
1 Parmesan rind
1 sprig of basil
Pecorino Romano

In a large pot bring salted water to a boil

In a skillet add olive oil. Then add in your onion and garlic. Season with salt, pepper and red pepper flakes. Once onions and softened add in your cherry tomatoes, cook for ~3 minutes. Add in your whole peeled tomatoes and break them down with a spoon. Add a 1/4 c of water to the empty tomato can and then add that to your pan. Add a Parmesan rind and a sprig of basil. Lightly season with salt and bring to a simmer. Simmer on low for ~15 minutes to allow sauce to thicken. (I put my noodles in the boiling water at this point). At the 10 minute mark put in the Nduja sausage. Stir until it has combined into the sauce. Taste and season with more salt and red pepper flakes if needed. Remove the basil sprig and Parmesan rind. Add in cooked pasta and a ladle of pasta water. Toss and enjoy. Garnish with basil and pecorino romano cheese ☺️.

Entree bowl from feltandfat in persimmon.
