## Caption

Pink sauce with spring peas and spicy sausage 😋

Ingredient 
12oz rigatoni 
6 cloves garlic minced 
1 medium shallot minced 
8oz English peas 
8oz spicy Italian sausage 
14oz whole peeled tomatoes 
3 Tbsp tomato paste 
3/4 C white wine 
3/4 C heavy Cream 
1/2 C Parmesan cheese 
1 ladle pasta water 
1-2 tsp Red Pepper Flakes 
Salt and pepper 

Bring pasta water to a boil in a large pot . 
In a large skillet put 2Tbsp olive oil and brown the sausage. Once it’s almost fully cooked add garlic, shallots, and red pepper flakes. 
Add in the tomato paste and Cook until the bright red turns almost brown. Add in white wine to deglaze then add peas. Season with salt and pepper. Add in the hand crushed tomatoes and simmer for 15 minutes. Then add your cream, Parmesan, pasta and pasta water. 

Serve with extra Parmesan and a sprinkle of red pepper flakes.
