[RECIPE] Italian-Style Creamy Mac & Cheese 🇮🇹🧀🔥 [RECIPE BELOW] 1️⃣ Cook 1 lb linguini until al dente. (Do not drain. Save that pasta water, it’s liquid gold.) 2️⃣ In a large bowl, add 1½ lbs room-temp ricotta. Drizzle in some good-quality olive oil and a splash of the pasta water. 3️⃣ Mix until smooth and creamy. Keep adding olive oil + pasta water a little at a time until the ricotta turns into a loose, silky sauce. 4️⃣ Toss in the hot linguini, freshly shredded Parmesan, and chopped parsley. Mix everything together until fully coated. 5️⃣ Finish with extra Parm if you’re feeling it… and enjoy 🤌✨ 🔥 Optional but recommended: crushed red pepper flakes for a little kick. P.S.
