That bubbling mozzarella moment… impossible to ignore 🧀🔥 Crispy chicken, garlicky tomato sauce, fresh basil, and all the comfort of a proper oven-baked classic. Team crispy edges or melted cheese pull? 🍗👇 @cookwithfez Ingredients 2.2 lbs chicken breast (1kg) 4–5 garlic cloves 2 eggs 2 cups breadcrumbs (200g) 1¾ cups tomato sauce (400g) 4¼ cups vegetable oil (1L) (for frying) 9 oz mozzarella cheese (250g) 1 cup grated cheese (Parmigiano or Pecorino) (100g) Fresh basil leaves Extra virgin olive oil, as needed Instructions In a saucepan, heat a drizzle of extra virgin olive oil and sauté the garlic. Add the tomato sauce and cook for about 20 minutes, until thickened and reduced. Remove garlic if desired. Slice each chicken breast in half horizontally, then open it like a book. Pound the meat to about ½ inch (~1.5cm) thickness. Dip the chicken in beaten eggs, then coat evenly in breadcrumbs. Heat vegetable oil to 365°F (185°C). Fry the chicken for 8–9 minutes total, about 4 minutes per side, until golden. Drain on paper towels to remove excess oil. In a baking dish, spread a layer of tomato sauce. Place fried cutlets on top, cover with more sauce. Add slices of mozzarella and sprinkle with grated cheese. Bake in the oven at 375°F (190°C) until the cheese is melted, bubbly, and golden. Top with fresh basil and serve hot. #giallozafferano #comfortfood #chicken #tomatosauce #Foodie
