Nothing says comfort like Grandma’s Lasagna with slow-simmered ragù, creamy béchamel, and fresh homemade pasta ❤️🍝 A true Italian classic made with love, layer by layer. @Nonna Silvi #Lasagna #ItalianFood #HomemadePasta #Ragu #giallolovesitaly Ingredients For the Ragù 14 oz ground beef (400 g) 7 oz ground pork (200 g) 2 cups tomato purée (500 ml) 2/3 cup red wine (150 ml) 2 carrots 1 celery stalk Olive oil, as needed 2 onions Salt, to taste For the Béchamel Sauce 4 1/4 cups milk (1 liter) 7 tbsp butter (100 g) 2/3 cup all-purpose flour (100 g) Nutmeg, to taste For the Fresh Pasta 5 eggs 4 cups all-purpose flour (500 g) Instructions 1. Prepare the Ragù Finely chop the celery, carrots, and onions. Sauté them in olive oil over medium heat until softened. Add the ground beef and ground pork, and cook until lightly browned. Pour in the red wine and let it evaporate. Add the tomato purée, stir well, and simmer over low heat for at least 4 hours, until the sauce is rich and flavorful. 2. Make the Béchamel Sauce Heat the milk in a saucepan until it begins to simmer. In a separate pan, melt the butter, then stir in the flour to make a roux. Slowly whisk the roux into the hot milk. Remove from the heat and continue stirring until the sauce thickens. Season with nutmeg to taste. 3. Prepare the Fresh Pasta Place the flour in a mound on a work surface and make a well in the center. Crack the eggs into the well and mix until a dough forms. Roll the dough out to about 0.2 inches thick (5 mm). Blanch the pasta sheets in salted boiling water for a few seconds. 4. Assemble the Lasagna Spread a layer of béchamel sauce in a baking dish. Add a layer of pasta, more béchamel, and then ragù. Repeat the layers until the dish is filled. Bake at 350°F (180°C) for 20 minutes. Serve warm and enjoy.
