Golden, fluffy Ligurian focaccia topped with sweet onions 🧅✨ Soft inside, crispy outside—pure Italian comfort! 🇮🇹 @Cooker Girl #focaccia #italianfood #homebaking #breadlover #comfortfood INGREDIENTS FOR THE DOUGH (2 pans 10x14 in / 25x35 cm) 2 1/2 cups bread flour (300 g) 1 2/3 cups all-purpose flour (200 g) 1 1/4 cups water, room temperature (280 g) 2 tbsp extra virgin olive oil (25 g) 12 g fresh yeast / 2 tsp active dry yeast 1 3/4 tsp salt (10 g) FOR THE EMULSION 3 tbsp + 2 tsp extra virgin olive oil (50 g) 2 tbsp water (30 g) Salt Semolina flour TOPPING 4 white onions Extra virgin olive oil Salt PREPARATION Pour the flour into a bowl and lightly mix with the yeast. Make a well in the center, add the water, and dissolve the salt. Start mixing, then add the olive oil. Work the dough by hand until all the flour is absorbed. Knead for 10 minutes. Let the dough rest for 20 minutes. Divide the dough in half and shape each portion into a rectangle. Let rise for 40 minutes, until doubled. Roll out the dough and place it in oiled baking pans dusted with semolina flour. Cover and let rise for another 40 minutes to 1 hour, until doubled in size. Thinly slice the onions, sprinkle with salt, and let rest in a bowl for 30 minutes to soften and release water. Sprinkle the focaccia surface with flour and create dimples with your fingers. Squeeze excess water from the onions and spread them over the dough. For the emulsion, blend all ingredients with an immersion blender and divide evenly over the two pans. Bake in a preheated static oven at 375°F (190°C) for about 25 minutes. Let cool on a wire rack.
