🥖✨ This olive focaccia is crispy, golden, and packed with Mediterranean flavors! Made with extra virgin olive oil and juicy olives, it's the perfect addition to any meal. Try it fresh out of the oven! 🍽️💛 @cooker.girl Ingredients(25x35 cm Tray) For the Dough 3 ¼ cups medium-strength flour (400 g) 1 ¼ cups room-temperature water (280 g) 1 tbsp active dry yeast 2 tsp salt (12 g) 1 ½ tbsp extra virgin olive oil (20 g) Durum wheat semolina or cornmeal, as needed For the Brine 2 tbsp extra virgin olive oil (30 g) 2 tbsp water (30 g) Salt, to taste Flaky salt for garnish 1 cup olives in extra virgin olive oil, well drained and dried (250 g) Instructions Prepare the Dough Add the flour to the stand mixer with the dough hook. Add the yeast and most of the water (reserve about 3 tbsp). Mix on low speed. Once the flour absorbs the water, gradually add the salt and the remaining water while mixing. Occasionally stop to flip the dough to aid gluten development. Slowly pour in the olive oil while mixing, allowing it to absorb. Transfer to a work surface, fold a few times, and let it rest for 10 minutes. Incorporate the Olives Stretch the dough into a thin layer on the work surface. Spread the drained olives evenly, then fold and laminate the dough to incorporate them. Place the dough in a lightly greased bowl, cover, and let it rise until doubled in size (about 2 hours), giving it a round of folds halfway through. Final Proofing Transfer the dough to a well-oiled 25x35 cm baking tray, sprinkled with semolina or cornmeal. Be gentle to avoid deflating the dough. Cover and proof for 1 hour, until it doubles in volume. Baking Preheat the oven to 430°F (220°C), fan mode. Drizzle plenty of olive oil over the surface and add more olives. Use your fingers to create the classic dimples. Sprinkle a few drops of water and finish with flaky salt. Bake for 35-40 minutes until golden brown. Cool on a wire rack before serving. #FocacciaLove #HomemadeBread #OliveFocaccia #ItalianBaking
