Bucatini with fresh cherry tomatoes, creamy stracciatella, and fragrant basil 🍝✨ Simple ingredients, silky tomato sauce, and a rich cheese finish—pure Italian comfort in every bite. @sebastian_fitarau #giallozafferano #giallolovesitaly #pastalovers #pasta Ingredients (Serves 4): 3 1/3 cups dried bucatini (320 g) 5 1/3 cups fresh cherry or grape tomatoes (800 g) 1 cup stracciatella cheese (250 g) Fresh basil, to taste 2 garlic cloves Olive oil, as needed Salt, to taste Black pepper, to taste Water, as needed Instructions: In a large pan, heat a drizzle of olive oil and add the crushed garlic cloves. Sauté over medium heat until the garlic is golden, then remove it from the pan. Add the fresh tomatoes, a pinch of salt and pepper, and a few basil leaves. Mix well and cook over medium heat for about 20 minutes, adding a little water if necessary, until the tomatoes soften and release their juices. Once cooked, transfer the tomatoes and their sauce to a blender. Blend until smooth. Strain the sauce through a fine sieve to remove the seeds and skins, then return the filtered sauce to the pan. Cook the bucatini until al dente. In a blender, combine half of the stracciatella with a drizzle of olive oil and a pinch of salt and pepper. Blend until smooth and creamy. Set aside. Add the drained bucatini to the pan with the tomato sauce and mix well. If the sauce is too thick, add a little pasta cooking water until the desired consistency is reached. Spread a spoonful of the stracciatella cream on the bottom of each plate. Add the bucatini with the tomato sauce on top. Garnish with the remaining stracciatella, a few fresh basil leaves, freshly ground pepper, and a drizzle of olive oil. Enjoy your meal! 🍝🌿
