Golden, cheesy Pizza Bombs 🍕✨ Soft dough, gooey mozzarella, and pepperoni in every bite — brushed with butter and finished with parsley and grated cheese for the perfect snack. #pizzabombs #pizza #homemadepizza #italianrecipes #giallolovesitaly @cookingwithbello Ingredients Makes 8 bombs For the Dough 1 2/3 cups + 1 tablespoon all-purpose flour (205 g) 1 1/4 teaspoons instant dry yeast (4 g) 2 tablespoons + 1 teaspoon sugar (30 g) 1/2 cup + 1 tablespoon milk, lukewarm (130 ml) 3/4 teaspoon salt (4 g) 2 tablespoons butter, room temperature (30 g) 1 egg, for the egg wash For the Filling 3 tablespoons + 1 teaspoon tomato passata (50 g) 2/3 cup pizza mozzarella (80 g) 8 pepperoni slices (or salame) To Serve 2 tablespoons butter (30 g) 1 small bunch fresh parsley 2 tablespoons grated Parmigiano cheese (10 g) Preparation In a bowl, add the milk, yeast, and sugar, and mix everything with a spoon. Add the flour and salt and knead for a couple of minutes, or until a dough forms. Incorporate the room-temperature butter and continue kneading for a couple more minutes, or until you have a smooth dough. Cover the bowl with plastic wrap and let the dough rest for 1 hour. If the dough feels too soft, you can add a tiny amount of extra flour, but do not add too much or the Pizza Bombs will become too hard. Divide the dough into 8 pieces and use your hands to flatten each piece into a small round of dough, making sure it is not too thin. Add 1 teaspoon tomato passata, some grated mozzarella, and 1 pepperoni slice (or salame) to each one. Use your hands to seal each small pizza into a ball. Place the Pizza Bombs on a baking tray lined with parchment paper. If you have time, cover the Pizza Bombs with plastic wrap and let them proof for another 30 minutes. Meanwhile, beat the egg and brush it over the Pizza Bombs before baking. Bake for about 20 minutes at 340°F (170°C), or until golden. If the Pizza Bombs are browning too early, cover them with aluminum foil to prevent them from burning. Meanwhile, melt the butter in the microwave for about 40 seconds. Brush the Pizza Bombs with the melted butter, then sprinkle with chopped parsley and grated Parmigiano before serving. Enjoy!
