Juicy pot-seared Roast Beef with rosemary, garlic, and a silky pan sauce 🥩🌿 Perfect served warm or thinly sliced cold. Simple ingredients, classic Italian flavor! #RoastBeef #ItalianCooking #ComfortFood #HomeCooking @sebastian_fitarau Ingredients 2.2 lb beef striploin/sirloin roast (1 kg), in one piece, boneless 2 tablespoons extra-virgin olive oil Fine salt and freshly ground black pepper, to taste 1 garlic clove, crushed 1–2 sprigs fresh rosemary 1/3–1/2 cup dry white wine (80–120 ml) Beef broth, as needed (about 1/2–1 cup / 120–240 ml) 1 tablespoon butter (for finishing the sauce) Instructions Pat the meat dry and tie it with kitchen twine to maintain a cylindrical shape. Salt all sides and let it rest at room temperature for 30–45 minutes. Heat a heavy pot over medium-high heat with the olive oil. Add the garlic and rosemary and let them infuse the oil. Sear the meat on all sides, including the ends, for 8–10 minutes, until an even crust forms. Deglaze with the white wine and allow the alcohol to evaporate. Add some beef broth, cover with a lid, and cook over low heat for about 40 minutes, turning the meat halfway through cooking. When the meat is done, transfer it to a cutting board or tray and let it cool completely. Strain the cooking liquid and reduce it over medium heat until slightly thickened. Whisk in the butter to finish the sauce and adjust with salt and pepper. Slice the roast beef very thinly against the grain and serve warm or cold with the sauce. Precision Tip (Internal Temperature) If using a probe thermometer, measure in the center of the meat: 118–122°F (48–50°C): very rare 126–129°F (52–54°C): pink 133–136°F (56–58°C): medium 140°F+ (60°C+): well done
