🍽️✨ Bring a taste of Italy to your table with this rich and flavorful Braised Rabbit with Sun-Dried Tomatoes and Olives! Tender, aromatic, and perfect for a cozy dinner. 🇮🇹❤️ @sebastian_fitarau #ItalianCuisine #BraisedRabbit #ComfortFood #MediterraneanFlavors Ingredients: 4 ½ cups rabbit, cut into pieces (1 kg) ⅔ cup pitted black olives (100 g) ⅔ cup sun-dried tomatoes in oil, drained (100 g) ⅓ cup sliced onion (40 g) 2 cloves garlic, sliced (2 teaspoons / 10 g) 1 small sprig rosemary (0.1 g) 1 ¼ cups hot vegetable broth (300 ml) 2 teaspoons olive oil (8 g) ¼ teaspoon salt (1 g) ⅛ teaspoon black pepper (0.2 g) 3 tablespoons Marsala wine (50 g) Instructions: Drain the sun-dried tomatoes from their oil and cut them into small pieces. Slice the onion into thin strips and cut the garlic cloves into slices. In a large casserole or Dutch oven, heat the olive oil. Add the rabbit pieces and brown them on all sides until golden. Add the onion, garlic, and rosemary. Sauté gently until the onion becomes translucent. Pour in the Marsala wine and allow the alcohol to evaporate. Add the sun-dried tomatoes, hot vegetable broth, salt, and pepper. Cook over low heat for about 40 minutes, or until the rabbit is tender. If necessary, add a little more broth during cooking. At the end of cooking, stir in the olives and mix well. Serve the braised rabbit hot, with a side dish of your choice. Enjoy your meal!
