Cover everything with water and season with salt. Bring to a simmer and cook for 2 hours. Remove the bay leaves. Transfer the cooked vegetables and half of the chicken to a food processor and blend until smooth. Return the mixture to the broth. Add the pastina and cook according to the package instructions. Shred the remaining chicken and either add it back into the soup or serve it on the side with a drizzle of olive oil and a sprinkle of salt. Serve topped with grated cheese. Buon appetito!
