Slow-braised beef in red wine until it melts, served over the creamiest black truffle mash 🤎🍷🥔✨ Pure comfort with a little luxury—who’s coming to dinner? 😍🍽️ @Sebastian Fitarau #braisedbeef #trufflemashedpotatoes #italianfood #comfortfood #homemade Ingredients (Serves: 4) For the braised beef 2.2 lb (1 kg) beef chuck roast (or similar braising cut), trimmed 2 onions, sliced 2 carrots, diced 2 celery ribs, diced 2 garlic cloves, smashed (left whole) 2 cups + 2 Tbsp (500 ml) full-bodied red wine (Chianti works great) 2 cups + 2 Tbsp (500 ml) beef broth (or water) 3 rosemary sprigs 1 Tbsp tomato paste (it’s mentioned in the method, so I added it here) Extra-virgin olive oil, as needed Kosher salt & black pepper, to taste For the black truffle mashed potatoes 1 3/4 lb (800 g) yellow-fleshed potatoes (Yukon Gold are perfect) About 7 Tbsp (just under 1/2 cup / 100 ml) milk, warm 3 1/2 Tbsp (50 g) unsalted butter 1 oz (30 g) fresh black truffle, finely grated Salt & black pepper, to taste Instructions Cut the beef into 1 1/2–2 inch cubes. In a large Dutch oven or heavy pot, heat a generous drizzle of olive oil over medium-high heat. Brown the beef well on all sides (work in batches if needed). Transfer to a plate. In the same pot, add onions, carrots, and celery. Cook 5–7 minutes, until softened. Stir in the smashed garlic, rosemary, and tomato paste. Cook 2 minutes. Return the beef to the pot. Pour in the red wine, scraping up any browned bits. Simmer 3–5 minutes to let the alcohol cook off. Add the broth. Season lightly with salt and pepper (you can adjust at the end). Cover and simmer on low (gentle bubbles) for 2 1/2 to 3 hours, until the beef is very tender. Sauce tip: If the sauce is too thin at the end, remove the beef, simmer the sauce uncovered to reduce, then return the beef. (Go easy on salt early—reducing concentrates it.) Boil potatoes in salted water until tender. Drain and let sit 5 minutes. Rice or mash the potatoes back into the pot. Add butter and warm milk, then season with salt and pepper. Fold in the finely grated black truffle. Spoon truffle mash onto plates and top with the hot braised beef and its sauce. Optional: garnish with truffle shavings.
