Unexpected combo, unforgettable flavor! 🍐🧀 Try this creamy Pasta with Pears and Pecorino for a sweet & savory twist on Italian comfort food 🇮🇹✨@Chef Marco NYC #PastaLove #ItalianRecipes #cacioepepe #EasyDinner #giallolovesitaly Ingredients: 3 ⅓ cups pasta (400g) 2 average pears 2 tablespoons butter (30g) 1 ½ cups grated Pecorino Romano (150g) Salt, black pepper to taste Instructions: Slice the pears however you prefer—smaller pieces will cook faster. Melt the butter in a skillet over medium-high heat. Add the sliced pears and season with salt and black pepper. Cook on high heat for a couple of minutes, then lower the heat and simmer until the pears are soft. Meanwhile, cook the pasta in salted water. Be sure to reserve some of the starchy cooking water—this is essential for the sauce. In a bowl, shave or grate a generous amount of Pecorino Romano and season it with black pepper. Add about ½ a ladle (approx. 3–4 tablespoons) of hot pasta cooking water to the cheese, and mix vigorously until you achieve a uniform, creamy consistency. When the pasta is about 2 minutes away from being fully cooked, transfer it directly into the skillet with the pears. Add a small amount of cooking water. Stir over high heat until the added water evaporates. Then turn off the heat. Let the pan cool slightly. Add the Pecorino cream and a splash of pasta water if needed to loosen it. Mix well. Do not turn the heat back on from this point forward.
