👵🍽️ What’s cooking? 🍝✨ Try Nonna Silvi’s Pasta with cabbage, sausage, and melty cheese – a warm hug in every bite! 💛🧀 #PastaRecipe #ItalianFood #pastalovers #giallolovesitaly 🧾 Ingredients (serves 4) 3 ⅓ cups pasta (rigatoni or mezze maniche) (400 g) 5 cups fresh savoy cabbage, thinly sliced (500 g) 10.5 oz sausage (sweet or spicy to taste) (300 g) 1 to 1 ⅓ cups cubed provola or scamorza cheese (150–200 g) 1 small onion, finely chopped 1 garlic clove, crushed ½ cup dry white wine 2–3 tablespoons extra virgin olive oil Salt and pepper, to taste (Optional) 1 fresh or dried chili pepper Grated cheese, to taste 🔪 Step-by-Step Preparation 1. Prepare the Cabbage Clean the cabbage: remove tough outer leaves, wash thoroughly, and slice into thin strips. Bring a pot of lightly salted water to a boil and blanch the cabbage for 5–8 minutes until just tender. Drain and reserve the cooking water for the pasta. 2. The Happy Sauté In a large skillet, heat 2–3 tablespoons of olive oil with the crushed garlic and finely chopped onion. Add chili if you like it spicy—Nonna Silvi style! When the onion is soft and fragrant, add the sausage (casings removed, crumbled) and sauté until golden. 3. Deglaze & Combine Pour in the white wine and let the alcohol evaporate completely. Add the drained cabbage to the pan with the sausage. Mix well, season with salt and pepper, and cook for a few minutes to let the flavors meld. 4. Finish the Pasta Cook the pasta in the cabbage’s blanching water until just under al dente. Drain and add the pasta to the skillet with the sausage and cabbage mixture, adding a bit of the cooking water if needed to bring it all together. Remove from heat and add the cheese cubes, mixing to allow the cheese to melt and become deliciously stringy. 5. Serve Like at Home Plate the pasta piping hot. Sprinkle with grated cheese if you like. And of course—don’t forget the scarpetta (bread for mopping up)! 😄 🍷 Nonna Silvi’s Tips For an extra-melty experience, use half smoked scamorza and half mild provola. Want it creamier? Stir in a touch of heavy cream before adding the cheese—always with love. Pair with a bold red wine: “If it gets a little messy, it tastes even better!” 🍷
