These Involtini di Verza are veggie-packed, protein-rich, and full of Mediterranean flavor! 🌿🌱 Chickpeas, tahini, and olives wrapped in tender Savoy cabbage — straight from Italy to your table! 🇮🇹✨ @sebastian_fitarau #VegetarianRecipes #CabbageRolls #MeatlessMeals Ingredients 1 large head of Savoy cabbage (to yield about 10 large leaves) 1 ½ cups dried chickpeas (300g), soaked overnight 2 carrots 1 medium red onion 3 tablespoons tahini (45g) ½ cup pitted Taggiasca olives (80g) 1 garlic clove Extra virgin olive oil Salt, to taste Black pepper, to taste 1 bay leaf (for boiling chickpeas) 🇺🇸 Instructions: 1. Cook the Chickpeas: Soak chickpeas in plenty of water for 12 hours. Drain and rinse, then boil in fresh water with a bay leaf for about 2 hours, or until tender. Drain and set aside. 2. Prepare the Cabbage Leaves: Remove 10 large, tender leaves from the cabbage. Wash them and blanch in salted boiling water for 3 minutes. Drain and cool them upside down in a bowl to retain their shape. 3. Cook the Vegetables: Finely chop the red onion and cut the carrots into thin matchsticks. In a pan, sauté the onion in a little olive oil with a whole garlic clove. Add the carrots, a pinch of salt, and a splash of water. Cover and cook for about 8 minutes, until tender. Discard the garlic. 4. Make the Filling: Blend half of the cooked chickpeas with tahini, salt, and pepper into a smooth paste. Add this to the pan with the vegetables, then stir in the remaining whole chickpeas and the olives. Cook until the mixture is soft but holds together—it should be moist, not runny. 5. Assemble the Rolls: Place a spoonful of the filling in the center of each cabbage leaf. Fold the sides inward, then roll up tightly. Place the rolls seam-side down in a lightly oiled baking dish. Drizzle with olive oil, season with salt and pepper. 6. Bake: Preheat your oven to 350°F (180°C, convection). Bake the rolls for 20 minutes, until heated through and lightly browned. 7. Serve: Plate the cabbage rolls and finish with a drizzle of extra virgin olive oil. Buon Appetito!
