Light, flavorful, and full of plant-based goodness! 🌱 These lentil & quinoa meatballs are baked to perfection and served with a zesty yogurt-mint sauce 😋✨ @sebastian_fitarau #VegetarianRecipes #MeatlessMeals #LentilLove #veganuary INGREDIENTS (Serves 4) For the meatballs: 1 cup cooked lentils (200g) ½ cup uncooked quinoa (100g) 1 small onion 2 garlic cloves 1 carrot 1 teaspoon ground cumin 1 teaspoon sweet paprika 1 tablespoon fresh parsley, chopped 1 egg ½ cup breadcrumbs (50g) Extra virgin olive oil, as needed Salt and pepper, to taste For the yogurt-mint sauce: ¾ cup Greek yogurt (200g) 1 tablespoon fresh mint, chopped 1 tablespoon lemon juice Salt and pepper, to taste PREPARATION Cook the quinoa: Rinse the quinoa thoroughly under cold water. In a pot, combine with ⅞ cup water (200ml). Cook over low heat for about 15 minutes, or until the water is fully absorbed. Remove from heat, cover, and let rest for 5 minutes. Prepare the vegetables: Finely chop the onion, garlic, and carrot. In a pan, heat a drizzle of olive oil and sauté the onion and garlic until translucent. Add the carrot and cook for another 5 minutes, stirring occasionally. Make the meatball mixture: In a large bowl, combine the cooked lentils, cooked quinoa, sautéed vegetables, cumin, paprika, parsley, egg, breadcrumbs, salt, and pepper. Mix thoroughly until well combined. If the mixture feels too wet, add a little more breadcrumbs. Shape and bake: With wet hands, form small walnut-sized balls and place them on a baking sheet lined with parchment paper. Bake at 400°F (200°C) for 20–25 minutes, or until golden. Make the sauce: In a bowl, mix the Greek yogurt, chopped mint, lemon juice, salt, and pepper. Serve: Arrange the warm lentil and quinoa meatballs on a serving plate and accompany with the yogurt-mint sauce
