💚🧀Pesto + ricotta + fresh pasta = pure comfort! This creamy, cheesy Lasagna with Pesto and Ricotta brings Italian coziness straight to your Christmas table 🇮🇹🇺🇸 No scale? No problem – we’ve got cup conversions ready! #LasagnaLove #PestoRicotta #ComfortFood #christmas 🍝✨ @sebastianfitarau Ingredients: For the pasta: 3 eggs 2 ½ cups all-purpose flour (300g) Salt, to taste For the filling: 1 cup pesto (200g) 1 cup ricotta cheese (250g) For the béchamel (makes 2 cups / 500ml): 2 cups milk (500ml) 3 tablespoons butter (40g) 1/3 cup all-purpose flour (40g) Salt, to taste Black pepper, to taste A pinch of nutmeg For assembling: 1 cup grated Parmesan cheese (100g) Extra virgin olive oil, to taste 1 bunch fresh basil Instructions: Prepare the fresh pasta dough by mixing flour, eggs, and a pinch of salt. Let it rest in the refrigerator for 30 minutes. Meanwhile, start the béchamel: warm the milk in one saucepan. In another, melt the butter, season with salt, pepper, and a pinch of nutmeg. Add the flour, cook for 2 minutes while stirring, then slowly pour in the hot milk. Bring to a boil, stir until thickened, and keep warm. Roll out the pasta to setting 3 thickness (on a pasta machine) and cut into sheets. Cook the pasta sheets briefly in salted boiling water, cool them immediately in cold water, and lay them on a clean towel to dry. Begin layering the lasagna in a baking dish: start with a layer of béchamel, then add pesto, dots of ricotta, and a sprinkle of Parmesan. Repeat the layers until all ingredients are used. Bake in a preheated oven at 350°F (180°C) for 25 minutes. Let rest for 10 minutes before serving. Garnish with fresh basil and a drizzle of olive oil. Enjoy!
