🎄Lasagna lovers, this one's for you! 🍝💚 @nonnasilviofficial’s Spinach & Salmon Lasagna is creamy, comforting, and full of homemade goodness. Perfect for your holidays with family and friends 🎅🏻🥰 #LasagnaLove #ItalianRecipe #HomemadePasta #giallozafferano 🧾 Ingredients For the fresh pasta All-purpose flour (as needed) Eggs (1 egg for every 3.5 oz / 100 g flour) For the filling Fresh salmon Fresh (or frozen) spinach Salt (to taste) For the béchamel sauce 4¼ cups whole milk (1 liter) 5 tablespoons + 1 teaspoon unsalted butter (80 g) ½ cup + 1 tablespoon all-purpose flour (80 g) Salt (to taste) Nutmeg (optional) 👵 Instructions 1️⃣ Make the fresh pasta Place the flour in a mound on your work surface. Make a well in the center and crack in the eggs (1 egg per 100 g / 3.5 oz of flour). Begin mixing with a fork, then knead by hand until the dough is smooth and elastic. Cover with a cloth and let rest for at least 30 minutes. After resting, roll out the dough with a rolling pin or pasta machine into thin sheets—not too thin. Cut into rectangles and briefly blanch in salted boiling water for a few seconds. Drain and place on a clean cloth to cool. 2️⃣ Prepare the spinach Cook the spinach in a pan or pot with a little water. Once cooked, squeeze out excess liquid and chop coarsely. Add salt to taste. 3️⃣ Prepare the salmon Sear the salmon in a hot pan for just a few minutes per side. Let cool slightly, then slice into pieces. 4️⃣ Make the béchamel In a saucepan, melt the butter, then stir in the flour to form a roux. Gradually whisk in the warm milk, stirring constantly to avoid lumps. Cook until the sauce thickens into a creamy consistency. Season with salt and a touch of grated nutmeg if desired. 5️⃣ Assemble the lasagna In a baking dish, spread a thin layer of béchamel, then layer pasta sheets, spinach, salmon, and more béchamel. Repeat layers until ingredients are used up, finishing with béchamel on top. 6️⃣ Bake Bake at 350°F (180°C) for about 30–35 minutes, until golden on top. Let rest for 10 minutes before serving.
