🎄✨ The scent of the holidays is on the table... ✨🎄 Slow-braised pork short ribs in white wine and herbs, meltingly tender and full of flavor 🍖💫 Served with creamy mashed potatoes that taste like warmth, comfort, and celebration 🥔🧀 @cooker.girl #HolidayCooking #ChristmasComfortFood #BraisedShortRibs #giallozafferanolovesitaly 🥩 For the Braised Short Ribs: 2.2 lbs pork short ribs (1 kg) Extra-virgin olive oil, for searing 1 medium onion, chopped 2 carrots, chopped 2 celery stalks, chopped 1 tablespoon tomato paste 3 ¼ cups dry white wine (750 ml) 1 can whole peeled tomatoes, crushed by hand (~14 oz / 400 g) 1 sprig rosemary 1 sprig sage Salt, to taste 🥔 For the Mashed Potatoes: ¾ cup whole milk (200 ml) 1 sprig rosemary 1 sprig sage 1 clove garlic, lightly crushed and unpeeled 2.2 lbs potatoes (1 kg), peeled and boiled 7 tablespoons unsalted butter (100 g) Salt, to taste 1 cup grated Parmesan cheese (100 g) 🔪 Instructions Drizzle olive oil into a large pot over medium-high heat. Add the short ribs, searing well on all sides until browned. Remove and set aside. Pour off some of the pork fat, then add the onion, carrots, and celery to the pot. Cook until browned and softened—this is your soffritto. Stir in the tomato paste and cook for 2 minutes. Return the ribs to the pot. Pour in the white wine, scraping up any browned bits from the bottom. Once the alcohol has evaporated, add the crushed canned tomatoes, rosemary, and sage. Season with salt. Cover and let simmer gently for about 2 to 2½ hours, until the meat is tender and falling off the bone. In a small saucepan, heat the milk with rosemary, sage, and garlic over low heat until warm and infused. Remove herbs and garlic. While the milk warms, mash the hot boiled potatoes into a large pot using a potato masher. Heat the mashed potatoes for a few minutes to allow excess moisture to evaporate. Gradually stir in the infused milk, mixing until smooth. Remove from heat and add the butter, salt, and Parmesan, stirring until creamy.
