🍲 Comfort in a bowl! “Brodo di Cappone” (Capon Broth) brings rich flavor and Italian tradition to your kitchen. Perfect for winter soups, risottos, or just sippin’ warm! 🇮🇹❤️🇺🇸 @sebastian_fitarau #giallolovesitaly #broth #christmas #traditions #Italianfood 📝 Ingredients: Capon: 4.4 lbs (2 kg), cut into pieces and cleaned Celery: 1 ¼ cups (150 g), chopped Onions: 1 ⅓ cups (200 g), halved Carrots: 1 cup (150 g), sliced Rosemary: 1 sprig Sage: 2 leaves Bay leaves: 2 Juniper berries: 5 Cloves: 4 Black pepper: to taste Salt: to taste Water: 21 cups (5 liters) 👩‍🍳 Instructions: Rinse the capon pieces under cold running water to remove any residue. Pat dry with paper towels. Wash and cut the celery, carrots, and onions as directed. In a large pot, place the capon pieces and cover with 21 cups (5 liters) of cold water. Bring to a boil and skim off the initial foam that rises to the surface. Add the vegetables (celery, carrots, onions) and the herbs (rosemary, sage, bay leaves, juniper berries). Add the cloves and a pinch of coarse salt. Bring to a boil again. Once boiling, reduce the heat to low. For the first 20–30 minutes, foam will continue to appear—remove it gently with a ladle. Partially cover the pot and let simmer gently for about 4 hours. The longer it simmers, the more flavorful the broth. Check occasionally and add water as needed to maintain the liquid level. Skim as needed and clean the pot’s edge with a brush. When done, serve immediately, or strain the broth through a fine sieve or cheesecloth to remove solids. Return to the stove and adjust salt to taste, if needed. Let cool to room temperature and transfer to airtight containers. Store in the refrigerator for up to 3–4 days, or freeze for future use. Perfect as a base for soups, risottos, or sauces.
