🍷🇮🇹 Bring Italian comfort to your Thanksgiving table with this rich and tender Braised Short Ribs with Mashed Potatoes! Slow-cooked in red wine & balsamic, served over creamy purée 🥔✨ @sebastian_fitarau #giallolovesitaly #ThanksgivingDinner #BraisedShortRibs #ItalianComfortFood Serves 4 Ingredients For the meat: 2.2 lbs bone-in beef short ribs (1 kg) 1 small onion, sliced 1 sprig fresh sage 1 sprig fresh rosemary 1 glass dry red wine (about ⅔ cup / 150 ml) 3 tablespoons balsamic vinegar (40 ml + 2 teaspoons / 10 ml) 2 tablespoons olive oil ½ cup water (120 ml), as needed Salt, to taste For the mashed potatoes: 2 cups potatoes, peeled and cubed (300 g) 3 tablespoons butter (40 g) 3 tablespoons whole milk (40 ml) Salt, to taste Fresh chives, for garnish Instructions 1. Make the Mashed Potatoes Boil the potatoes in salted water until soft. Drain, mash, then stir in butter (3 tbsp / 40 g), milk (3 tbsp / 40 ml), and salt to taste. Keep warm. 2. Cook the Short Ribs Season the short ribs with salt and let them marinate briefly. In a large pot, heat olive oil (2 tbsp) and sear the ribs on all sides until browned. Remove and set aside. In the same pot, add sliced onion and cook on low heat for 3 minutes until soft. Deglaze with 2 ½ tablespoons (40 ml) of balsamic vinegar and let it reduce. Return the meat to the pot with sage and rosemary. Pour in the red wine and let the alcohol evaporate. Add water (about ½ cup / 120 ml), cover, and simmer on low for 1½ hours, stirring occasionally. 3. Finish the Sauce When the meat is tender, remove it from the bones. Blend the cooking liquid until smooth. Add 2 teaspoons (10 ml) more balsamic vinegar, return the meat to the sauce, and reduce over low heat until glossy and thick, spooning the sauce over the meat (nappare). Adjust salt if needed. 4. Serve Plate the short ribs over a spoonful of mashed potatoes and garnish with fresh chopped chives.
