👻🎃 Trick or treat yourself to Nonna Silvi’s Haunted Pumpkin & Sausage Pasta — creamy, cheesy, and wickedly good for a spooky night in! 🍂🧀🕸️ @Nonna Silvi #giallozafferano #giallolovesitaly #halloween #pumpkin #bakedpasta 📋 Ingredients 3 cups elbow macaroni or short pasta (10.5 oz / 300 g) 2 ¾ cups diced pumpkin or butternut squash (14 oz / 400 g) 9 oz Italian sausage, casing removed (250 g) 1 ¾ cups diced smoked scamorza cheese, or plain if preferred (9 oz / 250 g) 1 tablespoon extra virgin olive oil 1 garlic clove Vegetable broth or hot water, as needed Grated parmigiano cheese as needed Salt & black pepper, to taste Dice the pumpkin into small cubes. In a large skillet, heat a tablespoon of olive oil and add the garlic clove. Let it turn golden, then remove it for a milder flavor. Add the pumpkin, a pinch of salt and pepper, and a splash of vegetable broth or hot water. Cook for about 10 minutes, until the pumpkin is soft. Once cooked, blend the pumpkin into a smooth, velvety cream — this will be the heart of your baked dish. While the pumpkin cooks, remove the sausage from its casing. Heat a little oil in a pan, crumble in the sausage, and cook until golden. Set aside. Boil the pasta in a large pot of salted water. Drain it a few minutes early (al dente), since it will finish cooking in the oven. Mix the drained pasta with the pumpkin cream in a pan. Add a few tablespoons of reserved pasta water to make everything creamy and well combined. Lightly butter a 9x13 inch (approx. 20×30 cm) baking dish. Start layering: A layer of pasta with pumpkin cream A layer of browned sausage A layer of scamorza cubes Repeat the layers, ending with scamorza on top. Generously sprinkle with grated cheese. Preheat the oven to 350°F (static) (180°C). Bake for about 35 minutes, until the top is golden and slightly crispy.
