Fluffy potato pillows, rich tomato sauce, melty burrata… 🔥🇮🇹 Gnocchi alla Sorrentina is everything you want in a comfort dish🧀🍅 @cooker.girl #giallozafferano #giallolovesitaly #Gnocchi #BakedGnocchi #ComfortFood #italianrecipes Ingredients For the gnocchi: 1 lb + 2 oz potatoes (500 g) 1 ¼ cups all-purpose flour (150 g Salt, to taste For the sauce: 1 ¼ cups canned whole tomatoes (300 g) 1 garlic clove Fresh basil leaves Extra virgin olive oil, as needed Salt, to taste 2 cups burrata, torn by hand (250 g) ½ cup grated cheese (50 g – Parmesan or Pecorino) Instructions 1. Prepare the Gnocchi: Wash the potatoes and place them on a baking tray with a layer of coarse salt on the bottom. Bake at 355°F (180°C) for 35–40 minutes, or until a fork easily pierces through them. While still hot, peel and mash the potatoes. Add the flour and a pinch of salt, mixing just until the dough comes together. Avoid overworking. Roll the dough into logs about 1¼ inches (3 cm) thick, and cut into gnocchi about 1 to 1¼ inches (2–3 cm) long. Shape if desired using a fork or gnocchi board. Place on a floured kitchen towel. 2. Make the Sauce: In a pan, heat a drizzle of olive oil with the garlic. Add the tomatoes (crushed by hand or lightly blended), a pinch of salt, and fresh basil leaves. Cover and simmer over low heat for 30 minutes, until thickened. 3. Cook the Gnocchi: Boil the gnocchi in salted water. As soon as they float, remove them with a slotted spoon and transfer to a bowl. Gently toss with the tomato sauce. 4. Assemble the Dish: In a baking dish, spread a layer of sauced gnocchi, then add torn burrata. Repeat with a second layer of gnocchi, more burrata, and top generously with grated cheese. 5. Bake: Bake in a preheated oven at 480°F (250°C) for about 5 minutes, preferably using the grill function to achieve a golden, crisp top. Top with additional burrata and fresh basil before serving hot.
