Homemade Cassata🤩✨Ready for a slice of Sicilian heaven??! 🎂🍫 #Cassata #dessert #sicilianfood #RicottaFilling #SweetLayers #Tasty @bilenasettepani Ingredients: 1. Prepare the Ricotta Filling (Day Before) Ingredients: * 32 oz. ricotta cheese, drained overnight * 3/4 cup sugar * 8 oz. semi-sweet chocolate chips (1/2 cup chopped pistachios or candied organze peel optional) * 1 teaspoon vanilla extract * Pinch of cinnamon Steps: 1. In a large bowl, combine the drained ricotta and sugar. Mix well until smooth and creamy. 2. Add in the vanilla extract and cinnamon, then fold in the chocolate chips and chopped pistachios. 3. Cover and refrigerate overnight to allow the flavors to meld. 2. Bake the Sponge Cake Ingredients: * 4 eggs * 3/4 cup (150g) granulated sugar * 1 tablespoon vegetable oil * 2 tablespoons milk or buttermilk * 1 teaspoon vanilla extract * 1 cup all-purpose flour * 1 teaspoon baking powder * 1/2 teaspoon salt Steps: 1. Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan. In a mixer, beat the eggs and sugar until light and fluffy 3. Lower the speed, then add in the vegetable oil, milk, and vanilla extract. Sift together the flour, baking powder, and salt. Gradually fold the dry ingredients into the egg mixture until just combined. 5. Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted comes out clean. 6. Let the cake cool completely on a wire rack. 3. Assemble the Cassata Steps: Slice the cooled sponge cake into 2-3 layers. Line a deep bowl with plastic wrap, leaving overhang. Knead marzipan with green food coloring, roll it out thin, and line the bowl with it. Place the first cake layer into the bowl and brush with simple syrup.Spread the ricotta filling evenly, adding candied cherries in the middle. 4. Prepare the Glaze & Decorate Ingredients: * 1 cup (113g) confectioners' sugar * Juice of one lemon * Milk or cream (if needed to thin) * Candied cherries (6 for decoration, 6 for inside) Steps: 1. Make the glaze: In a small bowl, whisk together the confectioners' sugar and lemon juice. If needed, add a splash of milk or cream to reach a thick, pourable consistency. 2. Unmold the cake: Remove the cake from the fridge and carefully invert it onto a serving plate. Remove the plastic wrap. 3. Coat the cake: Pour the glaze over the top of the cake, letting it drip down the sides. 4. Decorate: Arrange candied cherries, or candied orange peel slices in a circle on top of the cake for decoration. 5. Serve Let the Cassata sit at room temperature for about 30 minutes before serving to allow the flavors to shine. Slice and enjoy! Top with the final cake layer, fold plastic wrap over, and refrigerate for at least 4 hours (or overnight).
