Green tomato salad with parsley oil focaccia croutons 🥬 

Green tomatoes are my favorite thing in the whole wide WORLD and I love how vegetal and *crisp* they are. Instead of frying them, I sometimes like to lean into the quick pickle of a really acidic dressing, then just throw in the rest of my favorite things. This salad does taste like the color green, but in a good way, I promise.
