AD: I’m excited to share my Skinny Ranch Chicken Dip recipe today! This dip has all the flavor, but low in calories. Pair this with sparkling water and you have a fabulous no-guilt appetizer for the holidays.

I can alway count on my local tomthumbtx for their exclusive brands that are high-quality products at a value. Plus many of them recently won 20 'Best New Products Awards'. I cooked their Citrus and Herb Spatchcock Chicken in my Instant Pot for this recipe and it turned out so good. I hope you like it!

SKINNY CHICKEN RANCH DIP ⤵️

1 package Spatchcock chicken
1 cup nonfat greek yogurt
½ cup small curd cottage cheese
1 package Ranch seasoning (1 oz)
2 cups sharp cheddar cheese
1/8 tsp salt
1/8 tsp cracked pepper

Instant Pot:

• Place a trivet in the Instant Pot internal pot then add the Spatchcock chicken. If it comes with oranges, place them on top. Add half a cup of water to the pot.
• For every pound add 6 minutes and every half a pound add 3 min. Mine was a 2.5 lbs chicken, so I cooked it for 15 minutes.
• Release pressure from Instant Pot, remove chicken and place onto a large plate. Remove skin, cut the meat, place into a bowl and shred with a hand mixer or a fork.
• Empty liquid from the pot and place pot back into the Instant Pot, press the keep warm button.
• Add yogurt, cottage cheese, ranch seasoning and stir.
• Mix in the shredded chicken, 1 cup cheese, salt and pepper.
• Pour into an 8x8 baking dish, top with the additional cheese and bake at 400 for 15-20 minutes until bubbly and brown on top.
• Serve with crackers or vegetables

Oven:
• Preheat oven to 375 degrees.
• Remove Spatchcock chicken from packaging and place in a baking pan. Cook for 50-65 minutes until well browned and your food thermometer is 165 degrees.
• Remove from the oven and let rest for 5 minutes. Remove skin, cut off pieces of meat and shred.
• In a bowl mix yogurt, cottage cheese and ranch seasoning.
• Mix in the shredded chicken, 1 cup cheese, salt and pepper.
• Pour into an 8x8 baking dish, top with the additional cheese and bake at 375 for 25 minutes until bubbly.
