Ci vogliono 3 giorni per fare le mie colombe artigianali che trovate su www.nonnasilvi.com Partiamo da un lievito madre naturale di quasi 80 anni di età derivato dal fermento dello yogurt  Facciamo 3 rinfreschi al lievito per arrivare a ottenere una massa che ci permetta di fare il primo impasto delle colombe , al quale si susseguono altri 2 impasti prima di sporzionarle  Questo processo serve per far incorporar l’aria all’impasto e a formare una maglia glutinica iper resistente che permette all’impasto di reggere gli ingredienti che ci vanno all’interno senza danneggiarlo . Il tutto viene impastato con l’impastatrice “tuffante” la quale simula il movimento di un impasto fatto a mano , mantenendo la temperatura e soprattutto non stressa l’impasto stesso.
