A perfect bar snack.  Deboned kingfish collar glazed with a kingfish bone sauce in the style of eel glaze using the bones, soy sauce, mirin, rice wine, burnt coconut powder and coconut sugar. Slowly grilled and finished with society garlic and nasturtium.
