The Best Taco Soup 🌮 (ever)
I had a friend’s old soup recipe but I think I upgraded with a few ideas from Pinterest. I wanted to use my Ninja Air Fryer too! All was done and I had the most delicious, creamy soup!!
.
.
Ingredients
- Ground Beef 🥩
- 1 red onion 🧅
-Assorted Beans (I like Northern White Beans & Red 🫘 . I did a can of each)
- 1 can Yellow Corn 🌽
- 1 can Rotel 🍅
- 1 can chicken broth
- 1 package cream cheese
- Paprika, Cumin, & Onion 🧅 Powder
- 2 limes
- 1/2 cup Mexican Cheese
- Hefty amount of chopped cilantro

-
I used the sear function to brown ground-beef before draining and pouring back in pot. I added all of the ingredients above before I used the pressure function where I set on low for 8 minutes (while I showered) then high on 5-7minutes. I believe my original recipe said high pressure for 10min? After cooking I had to stir the cream cheese to throughly mix and alllowed to simmer. I may could have added one extra can of broth, but mmmm yummy 😋
.
I love having salsa chips to serve with.
