What does a night cooking with Claire look like?
.
A little messy, and I got over half-way through before I realized I forgot an ingredient. This would also be a great crock pot recipe, but I adjusted it for someone who doesn’t have time!

Cheesy Enchiladas!
Chicken Tenderloins
1 onion
1 can Mild Enchilada sauce
Package of cream cheese
Packet of Mexican Cheese
Tortillas
:
I boil the chicken before I place chicken and onion in food processor to chop! (I usually chop onion first because I don’t want chicken too fine) In a bowl I then mix chicken & onion, half can enchilada sauce, and cream cheese together. I may sprinkle a little cheese in mixture too! I spoon mixture into tortillas before pouring remaining cheese and enchilada sauce on top! Place in oven at 350!
