Single serve carbonara Ingredients - 100g spaghetti - 50g guanciale, diced - 2 large egg yolks - 30g Pecorino Romano, finely grated - 1/2 tsp black pepper, freshly cracked - 1 tbsp salt (for pasta water) Steps 1. Bring a pot of water to a boil, add the salt, then cook the spaghetti until al dente (about 10-11 minutes). 2. Add the guanciale to a cold pan and set over medium heat. Cook, stirring occasionally, until crisp and the fat has rendered (6-10 minutes). Pour into a sieve to separate the fat from the crispy guanciale. Remove the pan from the heat 3. In a bowl, whisk the egg yolks and pecorino into a thick paste. 4. Scoop out about 1/2 cup of pasta water, then drain the pasta and add it straight to the egg/cheese paste 5. Let the pan cool for about 30 seconds, then add the cooked, drained pasta and egg mix tossing quickly and continuously. Keep tossing until glossy and creamy, adding more water as needed. 6. Stir through 2/3 of the crispy guanciale, saving some for garnish 7. Serve immediately with a crack of pepper, remaining guanciale and more grated pecorino #carbonara #bacon #singleserve #EasyRecipe
